The pretzel , or brezel , is a type of bread that is particularly widespread and famous in the United States, South Tyrol, Austria, Switzerland and Germany. Its origins date back to very ancient times, as far back as 610 AD, in the south of France or northern Italy. A young monk was preparing unleavened bread for Lent and decided to create a shape that portrayed the position of praying Christians (with their arms folded on their chest and each hand touching the opposite shoulder) to encourage children to pray. Pretzels arrived in the USA in 1620, according to legend brought on the Mayflower, the boat that transported pilgrims from Europe, and initially spread especially in Pennsylvania, where the hard variant probably originated. It is said that an apprentice baker fell asleep while baking the pretzels: once he woke up and convinced that the bread was not yet ready, since the fire had gone out, he baked them a second time, hardening them. At first the owner of the bakery was furious but then, after tasting the result, he discovered that the consistency and flavor were excellent and they lasted longer than the soft ones.
